>I had one of the best dinners the other night. Really – it was to die for. Here’s the skinny:

Pork loin – it was already seasoned from the ol’ grocery store – this one was Southwestern seasoned, or something. Doctor it up by hitting it with some lime juice and your favorite hot sauce. Grill until done, and cut up a fresh avocado on top just before serving. This cuts some of the heat from the hot sauce, and is so yummy.

Grilled corn – grill however many ears of corn you want on the grill, still in the husk. Keep a little water by the grill in case those husks catch on fire 🙂 When they’re done, cut the corn off the cob, and toss with fresh cilantro. I LOVE cilantro. I could just eat it off the stem. If you like hot sauce, add a dash or two on top.

Grilled peppers – ok, you don’t really need instructions on this one, but cut up red, yellow, orange or green peppers, whatever you prefer. Either put in a grill pan or on skewers and grill until done.

Ok, and the best part – Sangria. Oh my….homemade sangria. A bottle of red wine (should be Spanish red wine if you want to be authentic, I’m told.), about 6 ounces of orange juice, a splash of triple sec, a little sugar to taste, and whatever fresh fruit you prefer. The below had papaya, apples, lime, orange….maybe that was it. It was a couple of days ago and I’ve slept since then…and well, drank the sangria since then. 🙂 Anyways, mix all of that in a pitcher, add some ice and stir.

And that my friends, is a MexiCali meal. So yummy.
