Anyways – this snow day has made me ramble, apparently. Wanted to share this recipe with you because it was easy and yuuuuumy. Show-stopper, for sure.
In a 8×8 baking dish, drizzle some olive oil in the bottom – just a couple of drizzles. Then add some chopped onions in the bottom. Lay a piece of salmon on top of the onions, salt and pepper the salmon, and put some fresh dill on top of that. Roast in the oven at like 400 or 425…I can’t remember – just keep an eye on it until the salmon is done to your liking.
OH my – how easy is that? I think the fresh dill really makes a difference – and the onions, were to die for.
