Every year I carve a pumpkin I always roast the seeds – it’s my favorite part of the pumpkin carving process. I’ve experimented with different recipes, but think I found two pretty good ones this year. I kind of just eyeballed the amounts, so you’ll have to do the same!

Roasted Garlic and Worcestershire Pumpkin Seeds:

1 cup pumpkin seeds
About 1.5 tbs melted butter
Pinch of coarse salt
Even smaller pinch of garlic salt
A couple of dashes of worcestershire  sauce

Toss this all together, spread out on a sheet pan and put in a 375 degree pre-heated oven for 15 minutes.

Garlic and Lime Roasted Pumpkin Seeds:

1 cup pumpkin seeds
1 tsp or so or extra virgin olive oil (just enough to barely coat them)
Pinch of course salt
Couple dashes of garlic powder
Zest of one lime

Toss together, spread on a sheet pan and put in a 375 degree pre-heated oven for 15 minutes.

I think the garlic lime ones were my favorite. Yum!
