Lemon, Herb and Garlic Salmon

I whipped up some yummy salmon the other night. Super easy and really good. Here are the deets.


Two pieces of salmon
Four lemon slices
Two cloves of garlic (less to taste)
Two tsp. of italian seasoning (if you don’t have it, just use some parsley, rosemary, dill, or whatever you have that you think sounds delicious).
Drizzle of olive oil


Preheat the oven to 400.
Get out a piece of aluminum foil big enough to make tent over your salmon.
Drizzle a little olive oil on the foil, put the salmon on top of it. Drizzle a little more over the salmon.
Sprinkle the herbs on the fish.
Chop the garlic and spread it over the fish.
Place the lemon slices (two or so per piece of fish) over the salmon.
Close up the aluminum foil over the fish making a tent over it, cutting a couple of tiny holes in the top for air to escape.
Bake at 400 for 20-25 minutes, depending on how done you like your fish.


SO easy and delish. We had some lima beans (with hot sauce, ha) on the side and carrots.

Real quick on the carrots – I chopped them and put them in a skillet and added just enough water to nearly cover them. Bring it to a boil for 5 minutes, then reduce to a simmer and cover until all the water is gone or until they are tender, then pour the water off. Drop in a little bit of butter, sprinkle with dill and some brown sugar.
