Gobble Gobble, little nuggets. I hope you all had a big day with your loved ones yesterday. I’m visiting my parents in East TN and am loving every second of it. Today, we were watching Good Morning America and Emeril was whipping up recipes to utilize your leftover turkey. It was about 9 a.m. here, and Mom and I quickly decided we needed to have the turkey quesadilla for brunch.
Here’s the deal:
Leftover Thanksgiving Turkey Quesadilla (adapted from Emeril because he’s way too complicated)
Note – Ours made enough to stuff about four 8 inch tortillas
Leftover turkey (a couple of good handfuls)
One can of black beans (drained and rinsed)
One small onion, finely chopped
Two garlic gloves, finely chopped
One can of chopped green chiles
Whole wheat quesadillas (or whatever you prefer)
Chile powder to taste
Salt to taste
Cayenne pepper to taste
Pepperjack cheese (or whatever you have on hand)
Drizzle olive oil in a non stick skillet and heat to medium high.
Cook onions until soft and translucent.
Add garlic and sautee for a couple of minutes.
Add black beans, green chiles and turkey and let simmer until warmed through.
Season with salt, cayenne pepper and chile powder to taste.
Spoon a couple of hefty spoonfuls of mixture into tortilla shell, top with cheese and fold over.
Press down and put in another skillet drizzled with a little olive oil.
Brown both sides of the quesadilla and top with sour cream, salsa or whatever else your little heart desires.
Don’t feed the wildlife.
