I have cravings for red meat – ground beef specifically. I can never figure out what to do with it that’s not totally unhealthy. So healthy or not, I think this recipe is a winner. I’m sure it’s like lots of other meatball recipes out there (or meatloaf for that matter), but this is what I came up with and it’s delish.
Jenn’s Tiny Meatballs
1 pound ground beef
1/4 cup of Italian breadcrumbs
1/4 cup of parmesan cheese
1 TBS Italian seasoning (if you don’t have Italian seasoning, just use some rosemary, basil, sage, oregano, thyme, etc. – equal parts till you have about a tablespoon).
2 cloves of garlic (we love garlic, so if you aren’t a fan, cut this out or cut back)
Pinch of salt and pepper
- Pre-heat oven to 375.
- Combine all ingredients in a bowl and use the tools that God gave you. Mash it all together with your hands until well combined.
- Roll into one inch balls and put on parchment paper lined baking sheet.
Parchment paper will make your life so much easier.
- Bake for 20 minutes.
- Sprinkle with a little parmesan cheese if you want, and serve with your favorite pasta sauce or be a 5-year-old like us and dip them in ketchup.
